and definitely you must read this before you buy a Ultimate  http://www.chitownsyty.com/  click on the tech section  MAKE SURE YOU READ THE ULTIMATE INFORMATION THAT IS IN THAT SECTION.  
Since you have a Saudi Sy you don't have a O2 sensor.  If you are not running leaded fuel you would need to wire that back in for the Ultimate or get the Ultimate set up for running only in open loop mode if you are running leaded fuel or don't want to add the O2 sensor.   I believe that GM just clipped the wires off where they enter the loom.  I think I remember seeing a picture like that.  IF you don't know what these terms mean you need to do some basic research. Many people buy a lot of parts for these trucks and then when they don't work they complain about the parts even though the real problem is they don't research what they are doing and/or don't have a truck in good running condition before they start modifying. Anyway the Ultimate is the best chip out there for stock trucks with bolt-ons.  The others aren't that good an they could hurt your truck. There are also other Ultimate configurations available for some other mods you'll see when you read the chip page.
 
Definitely hard wire the IC pump and replace it with a better flowing pump.  Go here for that and other mods   http://www.sytyarchives.com/howto/
 
 
 
 
Gauges- at a minimum you need a boost gauge  Tach would be good  fuel pressure would be good  .  other possibilities are trans temperature, EGT, etc.  The first three I think are the most important
 
Steering wheels are the owners preference  If it fits a 1991 GMC Sonoma it will fit a Sy.  So a search you should find plenty of info.

Hi All follow Sy & Ty owners,

I have complete stock Sy that I'm the first owner since I bought it in 1993.

I am wondering if it is the time now to go for an Ultimate Chip. If you can give me your feedback for those that bought the chip and what they think I should do.

Also I'm thinking of buying some gauge pods so what is really recommended to take by the group (is it Boost/Vaccum + Oil Temperature + ????? ). Is it better to go for an electrical gauges or mechanical ones? I know that I will buy a tech as I do not have an RPM rev as my Sy is one of those Saudi Sy that does not have the same cluster as the ones in the USA and the rest of the world (for some strange reason). I just saw one in Summit Racing catalog and you can even by the press of one button change the color of the inside of the gauge. I should buy something like that for my room ( I mean the color changing button..what did you think>?).

What about wiring the stock IC and get it working all the time. Does anyone had done that job and did not really feel happy after that?

Last question, what is the recommended replacement for steering wheel? I was thinking of Grant series. Any other names or brands that I should consider.
